This ruby-red and green salad is perfect for the holidays, featuring pomegranate seeds which are harvested in winter. It’s really easy and adds beautiful color and freshness to your table! We’ve also included a super easy golden balsamic vinaigrette recipe which pairs perfectly.

This ruby-red and green salad is perfect for the holidays, featuring pomegranate seeds which are harvested in winter. Whip this up for some added color and freshness on your table! We’ve also included a super easy, creamy balsamic vinaigrette recipe which pairs perfectly.

Ingredients

Golden Balsamic Dressing
  • 1/4 cup Golden Balsamic Vinegar
  • 1/2 cup Olive Oil (extra virgin recommended)
  • 1 shallot, finely minced
  • 1 clove garlic, finely minced
  • Salt to taste (1/2 tsp)
  • Pepper to taste (1/4 tsp)
Salad
  • 1 bag of mixed greens
  • 1 bag pecans pieces (4 oz.)
  • 1/4 red onion, thinly sliced
  • 1 apple, diced (Pink Lady or Honeycrisp)
  • 1 pomegranate, seeded
  • 1 container feta cheese, crumbled

Instructions

  1. Dressing: Combine all the dressing ingredients into a small bowl except the olive oil. Once mixed, gradually whisk in the oil to make a smooth dressing. Use immediately or store in the fridge for up to a week.
  2. Salad: Dump your mixed greens into a large salad bowl. Add the pecans, onion, and apple on top. Then, add almost all of the pomegranate seeds and goat cheese. Pour all the dressing on top and mix until nicely coated. Sprinkle the remaining pomegranate seeds and goat cheese on top for a picture perfect salad.
